It may surprise you to learn that there is a downside to living in the Cape Winelands.  And it’s not the wind. The actual downside to living out here is that is can be tricky to find really great fresh produce at our local grocery stores.  We don’t have those fancy big city food emporiums etc. and weekly vegetable boxes delivered to your door are almost unheard of. Even our Woolworths was kind of meh.

You can imagine then how delighted I was to see that our local Woolworths store – 6 minutes from my front door – was undergoing an extreme make-over.  If you have been visiting this blog for a while you will know that my love for Tannie Woolie runs deep.  With the new food section that has opened, I will admit that we are now talking the ocean deep kind of deep.

With the upgrade came a new seafood counter.  If you are in early enough, they sometimes have a 2 for 1 special on their fresh salmon portions.  I am a sucker for this deal and snap it up every time.

Look, I know that salmon has a pretty hefty price tag and you may be wondering why I would use fresh expensive salmon in a pasta recipe.  My reason is simple.  If you use the freshest, most fabulous ingredients you can find, you only need 5 to make the most extraordinary meal in the world.

This is a date night pasta, have friends over for dinner and spoil them pasta, or as in my case, cook it for hubby after a long day of DIY and reminisce about the similar pasta you enjoyed overlooking the Venice Canals pasta.

Salmon Pasta & Lemon Cream Sauce

Ingredients
Baked Salmon
  • 300g – 500 g fresh salmon
  • olive oil
  • salt and freshly cracked black pepper
Lemon Cream sauce
  • 500 ml (2 C) fresh cream
  • 1 whole garlic clove
  • finely grated zest of one lemon
  • juice of one lemon
  • salt and freshly cracked black pepper
  • 30 ml (2 T) chopped fresh dill (or Italian Parsley)
to serve
Instructions
  1. Place the salmon skin side down on a baking tray that has been sprayed with non-stick spray.
  2. Sprinkle with olive oil, salt and pepper.
  3. Bake the salmon for 10 minutes in an oven that has been heated to 180˚C.
  4. Allow to cool slightly and then remove the skins and flake into large segments with a fork.
  5. Place the cream and the garlic clove into a saucepan and bring to the boil stirring continuously.
  6. Reduce the heat and remove the garlic.
  7. Add the lemon zest.
  8. Season the sauce to taste with the lemon juice, salt and pepper.
  9. Continue cooking the sauce over a medium heat until it thickens and coats the back of a spoon.
  10. Stir in the fresh dill.
  11. Stir the cream into the hot pasta.
  12. Toss through the salmon.
  13. Serve immediately.

    Tried three recipes with part of a 6.5 pound salmon I caught this week. This was voted the favourite amongst our dinner guests. Loved the delicate flavour of the sauce. Thanks for the recipe.

    also, by “fresh cream” do you mean heavy cream? half and half?

      Hi Kate – Our cream does not come in those descriptions. I would think heavy cream, your richest fullest cream would be the best. Half and Half I am not familiar with, but if it thickens it would be a great, possibly healthier option. Let me know so I can bank the info for future reference.

    Seriously good sauce. The whole dish worked and was pretty easy. I used the sauce recipe, again, over chicken.

    I will try this, but frustrated that the amount of pasta called for is not more specific. Or do most people know what one portion of pasta is. I do not.

      Dear Louise. I apologise for your frustration, as well as for my delay in reply. I have been off line for a few months. I never specified how much pasta as portion size often varies with appetite, so really one portion of pasta is how much you personally would eat in a regular pasta meal. That being said, 150 g cooked pasta per portion is a good place to start. Sam.
