Bagel with Scrambled Eggs, Proscuitto & Truffle Oil

  • 4 eggs
  • 45 ml (3 T) milk
  • Butter for frying
  • 2 bagels, toasted and smeared with butter
  • 4 slices prosciutto
to serve
  • truffle oil
  • freshly ground black pepper
  1. Whisk the eggs in a bowl together with the milk.
  2. Heat the butter in a small frying pan.
  3. Add the eggs and cook over medium heat stirring continuously until soft cooked.
  4. Remove from the heat.
  5. Place the prosciutto on the bottom half of the bagel.
  6. Top with the eggs.
  7. Drizzle with a little truffle oil and cracked black pepper
  8. Serve hot.
