Madeira Cake
Serves: 2 loaves
  • 175 g butter, softened
  • 175 g margarine, softened
  • 350 g caster sugar
  • 525 g cake flour
  • 20 ml baking powder
  • 6 eggs
  • 110 ml hot water
  • 500 ml icing sugar
  • juice of one lemon
  • hot water
  1. Cream the butter, margarine and caster sugar in an electric mixer until pale and light and fluffy.
  2. Sift the flour and baking powder together in a separate bowl.
  3. Beat the eggs into the creamed mixture, one at a time, following each with a spoonful of flour.
  4. Sift the remaining flour into the creamed mixture and mix until well combined.
  5. Pour in the hot water and beat to mix well.
  6. Divide the batter between two bread loaf pans that have been sprayed with non-stick spray and line with baking paper.
  7. Bake in an pre-heated oven at 180˚C for one hour or until a skewer inserted in the middle comes out clean.
  8. Cool.
  9. To make the lemon glaze place the icing sugar and lemon juice in a bowl. Whisk in enough hot water – a little at a time- to create a thick smooth glaze.
  10. Pour the glaze over the cake and allow to set before serving.
