I am about to make your day with this JOYA Apple Oat Bars Recipe. Hip Hip hooray school is out for the year and I am already full of JOYA (finds self very amusing). But, it also means that my kiddos, bless them both, are all mine for the next four weeks. Small gasp. Do you also get surprised at how often kids need to eat when they are at home?

I am always a bit taken a back at just how much my kiddos like to snack during the day. I blame the school routine of first and second breaks which pretty much conditions them to eat regularly. Here is the part where I make your day – all you need to do is to bake a batch of these JOYA Apple Oat Bars, which, by the way, are a whizz to put together, and you will have a delicious, homemade, apple rich snack on hand for whenever the kids start circling the kitchen island looking for a little “something”.

Just how beautiful are these crisp bright red JOYA apples? I was just delighted when TopFruit asked me to feature these now in season glorious apples in a recipe. You can read more about these JOYA apples here, but know that they are full of Vitamin C, nutrients and natural sugars. These super juicy, sweet and tangy apples are already a firm favourite in our house. Deciding what to make with this energetic snack apple was my second challenge. The first was being able to stash away enough of them to bake with before they were devoured.

I loved how these bars turned out. One thing I really love is that because the apples go uncooked into the centre of the bars, they release their juice as they cook and sweet apple flavour permeates the entire bar. I will definitely be making a few batches of these bars this holiday.

They are a perfect breakfast bar to grab before hitting the beach. They will also travel well so great for picnics or padkos. Don’t ask me how I know this, but when served slightly warm, with perhaps a dollop of creme fraiche, its basically dessert.

JOYA apples are now in high season, and I pick mine up at my local Woolworths where they are always in stock.

Apple Oat Bars

Ingredients
  • 500 ml (2 C) cake flour
  • 5 ml (1 t) salt
  • 5 ml (1 t) baking powder
  • 250 ml (1 C) brown sugar
  • 250 ml (1 C) oats
  • 250 ml (1 C) butter, softened
  • 6 JOYA apples, peeled, cored
Instructions
  1. Sieve together the flour, salt and baking powder into the bowl of a processor or mixer
  2. Add the brown sugar and the oats.
  3. Add the butter.
  4. Pulse or beat to rub the butter evenly into the dry ingredients until it all comes together in a rough crumble.
  5. Press half of the mixture into a baking pan that has been sprayed with non-stick spray.
  6. Slice the JOYA apples thinly and evenly and then place the slices in a layer across the top of the dough.
  7. Crumble the remaining half of the dough over the top of the JOYA apple slices.
  8. Bake the JOYA Apple Oat Bars in an oven preheated to 180°C for 45 minutes or until crispy and golden.
  9. Leave to cool and then slice into bars.
